I was assigned Ellen’s blog over at Family Around The Table. Ellen is a freelance writer, recipe developer and former correspondent for the Tampa Bay Times. She inherited her cooking skills from her mother and Italian grandmother. She cooks the type of food me and my family, love so I knew it was going to be a tough choice to choose one recipe.
A few that caught my eye were her Buffalo Chicken Sliders, Maple Mustard Glazed Wrapped Chicken, and Columbia’s 1905 Salad Recipe
I decided on the egg bites because we are always looking for quick options for breakfast. I absolutely love that you can make a batch of these ahead of time and have them on hand. We love the starbucks egg bites so I knew these would be a huge hit at our house.
I also love that you can switch up the veggies, meat and cheese depending on what you like and what you have on hand to use up. We actually made 2 batches. One as written in the original recipe (with bacon, onion, white cheddar) and another batch with some stuff I had on hand to use up (ham, bell peppers, gouda).

Ingredients
- 6 eggs
- ? cup shredded cheddar cheese
- 12 slices bacon cooked and crumbled
- ½ cup onion chopped
- Salt and pepper to taste
- Cooking Spray
Instructions
Preheat the oven to 375 degrees.
Coat 6 cups of a muffin tin (or brownie pan) with cooking spray.
Crack the eggs into a large bowl and whisk to combine well.
Season with salt and pepper.
Add the onions, bacon and cheese to the egg mixture and stir to combine.
Divide the egg mixture evenly among the muffin cups.
Bake for 15-18 minutes or until eggs are set.
Serve immediately and refrigerate any leftovers
