We are on SUCH A Mexican food kick. Like GOOD Mexican food, not just weeknight ground beef tacos we usually have once a week. We’re talking homemade fried corn tortilla chips, homemade salsa, restaurant style queso, authentic enchiladas, ultimate loaded nachos, the best ever food truck style tacos with homemade corn tortillas, sour cream, candied jalapenos, red onions, cilantro etc…. you get the point. Mexican food heaven.

If you like Chipotle, Moes, or Cafe Rio Sweet Pork, you are going to absolutely love this. I always keep some cooked beef, pork or chicken in the fridge because it makes quick meals so easy to put together for our family. My kids have crazy schedules in this season of our life and we hardly ever eat at the same time so having a cooked and ready to use protein on hand is a huge help. This round I was assigned to pick a recipe from the food blog: Devour Dinner. Rebecca is a new to me blogger and I REALLY enjoyed browsing her website. We have several things in common other than the obvious love of cooking! She is a boy mom, a busy fellow sports mom like me and they also have a golden retriever. She also LOVES everything DISNEY(!), which is my absolute FAVORITE!
She cooks very similarly to how I do! Delicious recipes that are easy to make with common ingredients. She has lots of instant pot and air fryer recipes. I absolutely LOVE my instant pot. I haven’t used my air fryer yet but I got one for Christmas and plan on breaking it out really soon and have bookmarked several of her recipes to try!

But the first recipe I chose was the Cafe Rio Sweet Pork. Like I said previously, we absolutely love it in so many dishes! Tacos, nachos, enchiladas, burritos, salad…. This is just a HUGE hit at our house. I love that it uses simple ingredients we keep on hand and that is made in the slow cooker. Slow Cooker liners make clean up a BREEZE too!!!!

Ingredients
- 3 lb Pork Roast
- 8 oz can Tomato Sauce
- 3/4 cup Brown Sugar
- 1 cup Dr. Pepper
- 2 Tbsp Molasses
- 1 Tbsp Cumin
- 1 Tbsp Chili Powder
- 1 tsp Salt
- 2 tsp Garlic
- Pepper to taste
Instructions
Combine Tomato Sauce, Brown Sugar, Molasses, and Dr. Pepper.
Season roast with Cumin, Chili Powder, Salt, and Garlic
Place Pork loin in Slow Cooker / Crock Pot
Pour mixture over roast
Cook on low for 6-8 hours or High 3-4 hours or until roast shreds easily.
Remove roast and shred
Reduce excess liquid over medium/high heat until a thick sauce is reached. Add sauce to shredded pork to serve
