30 Minute Skillet Lasagna is the perfect weeknight Italian One Pot Meal! Ground beef, onion, garlic, tomatoes, pasta sauce, ricotta and Italian cheeses, noodles and chopped fresh basil give you all the flavors of traditional lasagna comfort food with less clean up.
Fall is crazy busy at our house with back to school and both of our kids in Fall sports. We do one pot skillet meals, sheet pan meals and crock pot meals several times a week. I got super lucky and got assigned my favorite blog in the whole world this round. I have cooked more recipes of Michaela’s over at An Affair From The Heart than any other website. Partly because she is one of my dearest blogging friends but mostly because her food is SO dang delicious. She cooks the exact type recipes our family loves and I have never made anything from her website that didn’t go in our regular rotation.
Michaela is an absolutely beautiful human being inside and out. She lives in Nebraska and is a SUPER mom of 4 AMAZING kids (and 2 furkids) & she and her husband just celebrated their 30th wedding anniversary. They are also expecting their first grand-baby early next year! She is so crafty and loves to entertain. She is the DIP QUEEN and the REUBEN QUEEN and she also makes some delicious beverages 😉 Our Freaky Friday recipe swap was actually her creation!
Some of our family’s favorite tried & true recipes of hers are: Doritos Chicken Casserole, Pizza Dip, Pecan Pie, Texas Trash Dip, P.F. Chang’s Lettuce Wrap Salad, Little King Salad, Easy ‘Dump’ Salsa, Classic Southern Tomato Cracker Salad (just like Granny used to make!), Philly Cheese Stuffed Peppers, Slow Cooker Applesauce, Cookies and Cream Ice Cream Cake, Grandma Jane’s Peanut Butter Cookies, and our all time favorite (and the recipe I am asked to bring to parties every single time): Crack Dip!!!!!!!
When I drew Michaela’s name, my kiddos were really excited because they love her food. I let my son pick out the recipe and he chose the 30 Minute Skillet Lasagna. He loves Italian food and pasta especially. I actually had everything on hand to make this recipe except the fresh basil so I picked some up and I am glad I did because fresh basil (and that whole milk ricotta) REALLY make lasagna to me.
This 30 Minute Skillet Lasagna was a HUGE hit. Not only was it ready and on the table in under half an hour but you just can’t beat the easy clean up of a 1 pot meal. We loved every single bite of this cheesy & delicious Italian comfort food recipe. I hope your family enjoys it as much as we did! Thank you to my sweet friend Michaela, for another amazing recipe!!!
Ingredients
- 1.5 pounds ground beef
- 1/2 cup onion, chopped
- Salt & Pepper, to taste
- 3 cloves garlic, minced
- 1 (14.5 ounce) Italian style diced tomatoes, UNdrained
- 1 can water
- 1 (32 ounce) jar pasta sauce
- 1 cup ricotta cheese
- 2-3 cups Shredded Italian blend cheese
- 10 lasagna noodles, broken into pieces
- fresh basil, chopped, to taste
Instructions
In a large oven safe skillet, brown hamburger with onion and salt and pepper.
Add in your garlic, and cook for a couple of minutes.
Stir in diced tomatoes and water.
Top with your uncooked noodles, spread over the top of the ground beef.
Pour pasta sauce over the top.
Cover and simmer on medium-high heat. Stir occasionally, so it doesn't stick to the bottom of your pan.
Cook until noodles are done. About 20 minutes.
Stir in 1 cup of the Italian cheese.
Top with dollops of ricotta cheese and the remaining shredded Italian cheese, cover and allow to melt for about 3 minutes.
Place under broiler for a minute or 2 to brown the cheese if desired.
Top with fresh basil and allow to rest for 5 minutes before serving.
