Chicken & Doritos Casserole
This Doritos Mexican Chicken Casserole is an absolute CROWD PLEASER. Chicken & refried beans, is layered with Rotel, seasonings, a creamy sauce and tons of Mexican Cheese. Topped with everyone’s favorite Nacho Tortilla Chips and you have a simple & flavorful meal everyone will love!
The past few weeks with moving and getting ready for school to start back, things have been a little busy around here, to say the least. As much as I love digging through my stack of hundreds and hundreds of well worn cookbooks and adapting and developing my own recipes, I just haven’t had much time. So over the past couple of weeks, I have relied on some ‘new to us’ recipes from some blogger friends of mine to help me bring you guys new material AND give my little family some new things to try as well!
This Doritos Mexican Chicken Casserole from An Affair From The Heart is a new family favorite around here. It was so easy to put together. I prepped it early in the morning, using some leftover grilled chicken, which seriously took less than 10 minutes. Then just popped it in the fridge until we got home from doing ‘back to school’ errands. 30 minutes in the oven and everyone in our house was coming to the kitchen asking what that delicious smell was. LOL! I love surprising my family with comforting meals after a long day.
This casserole is not spicy at all and even my picky 5 year old gobbled it right up. I topped mine with some fresh from the garden diced jalapeno because I like more of a kick, and lots of lettuce and tomato to make it ‘healthy’ 😉

Ingredients
- 16 oz can refried beans
- 4 chicken breasts, cooked and chopped
- 1 (10 oz) can of cream of chicken soup
- 4 cups Mexican shredded cheese, divided
- 1/2 cup milk
- 2/3 cup sour cream
- 1 can Ro-tel tomatoes, drained
- 1/2 packet of taco seasoning
- 1 (11 0z) bag of Nacho Cheese Doritos, crushed
- Tomatoes, Shredded Lettuce, Sour Cream, Black Olives, Jalapenos, Salsa
Instructions
-Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick cooking spray.
-In a large bowl combine the soup, milk, sour cream, Ro-tel, 1 1/2 cup of cheese and taco seasoning. Add chicken, and combine.
1st layer- Spread the refried beans in the bottom of the baking dish
2nd layer - 1/3 of the Doritos
3rd layer - 1/2 of the chicken mixture
4th layer - 1/3 of the Doritos
5th layer - 1/2 of the chicken mixture
6th layer - the rest of the cheese
7th layer - the rest of the Doritos
-Cover and bake for 30-35 minutes. (Bake the last 5 minutes uncovered)
-Serve with whatever toppings your heart desires and enjoy!
