BBQ-Cheddar Stuffed Corn Muffins
With some of our leftover pork roast, I made these BBQ Cheddar Stuffed Corn Muffins to go along with our BBQ Ranch Salads. Oh my, they were delicious. We especially loved them dipped in a little bit of ranch dressing. These make a wonderful salad side! With only 5 ingredients, these come together in a ‘jiffy’! See what I did there? 😉
BBQ-Cheddar Stuffed Corn Muffins
Ingredients
1 box jiffy mix
1 egg, beaten
1/3 cup whole milk
1/4 cup + 1/2 cup freshly grated sharp cheddar, divided
1/2 cup BBQ Pork in BBQ Sauce
Directions
Mix together jiffy mix, beaten egg, milk and 1/4 cup of cheddar cheese. Place 1 Tbsp of the mixture in the bottom of 8 sections of a muffin tin that have been sprayed with cooking spray. Next add 1 Tbsp of BBQ and 1 Tbsp of cheese. Top with the remaining Jiffy mixture. Bake in a 400 degree oven for 15 minutes or until muffins are done. Enjoy!
