Nacho Pasta Salad
So I am the crazy lady that heads to the grocery store with a meticulously itemized grocery list that coincides with the menu plan that I stick on my fridge every week. I also happen to be a marketers dream that sees a new product and buys one in every flavor. (by the way, if any of you happen to see the new cookie butter core flavors from ben & jerry’s help a girl out and buy me one! My grocery store doesn’t have them yet!)
So I love Hidden Valley salad salad dressings. The kind where you add your own milk and mayonnaise to their prepared packet of seasoning? Yeah, I grew up on that stuff and it is the bomb! So when I saw that Hidden Valley had a new line of pasta salads, I knew I had to try them!
Problem was, the salads just consist of noodles and a ‘make your own’ dressing packet that you add milk and mayo too. Well good try Hidden Valley, but I am gonna need a veg or 2. So as I was examining the back of the Southwest Ranch Flavor. I saw that they had a recipe for a ‘Nacho Pasta Salad’. It included ground beef and some veggies. Now we are talking!
I ended up changing the recipe around a little. (Obviously, that’s what I do!) I made a pasta salad, ‘salad’ and tossed it with some lettuce. My salad hating hubby ate 2(!) huge servings. It was DELICIOUS!
Nacho Pasta Salad
Ingredients
1 box Hidden Valley Southwest Ranch Pasta Salad prepared with milk and mayo per package directions
1 lb ground beef, cooked, crumbled and cooled for 10 minutes
1 cup chunky salsa
1 red bell pepper diced or 1 tomato diced
1/2 cup red onion, minced
3.8 oz can sliced black olives, drained
1/4 cup fresh cilantro, chopped
1 cup shredded cheddar cheese
crushed tortilla chips
1 head lettuce
additional ranch or southwest ranch if desired for serving
Directions
Prepare pasta salad according to package directions. Add cooled ground beef, salsa, red bell pepper or tomato, red onion, black olives, cilantro and cheese. Stir to combine. You can make this part ahead of time and store in the fridge. When ready to serve, toss with lettuce and tortilla chips and top with additional dressing if desired.
