Parmesan Garlic Roasted Broccoli
Broccoli is one of my son’s favorite vegetables so we have it a lot. I already blogged my Fresh Ginger & Garlic Roasted Broccoli recipe which is a STAPLE veggie at this house anytime we have Chinese food. This Parmesan Garlic Roasted Broccoli is a staple anytime we have Italian or Greek food. It is so good that I have a hard time keeping myself from eating it all straight from the pan! Give this a try to lighten things up next time you make a heavy Italian dish such as Alfredo or Chicken Penne Carbonara!
Parmesan Garlic Roasted Broccoli
Ingredients
2 heads broccoli
3 Tbsp olive oil
3 cloves garlic, very finely minced
1 lemon, juiced and zested
Parmesan cheese, from the can or fresh, whichever you prefer
salt & pepper to taste
Directions
Trim broccoli into florets and place on a greased baking sheet. Drizzle with olive oil and bake at 350 degrees for 10 minutes. Stir in pan. Bake for 5 more minutes. Stir in minced garlic and bake for 5 minutes longer. Stir in parmesan cheese, lemon juice & zest. Season with salt & pepper to taste. Enjoy!
