Honey Dijon Braised Chicken
We eat chicken 4 times a week at least! I am always coming up with new and different flavor combinations. We had this chicken one day last week and it got 2 thumbs up from every one of us! The little bit we had leftover made AH-MAZING chicken quesadillas the next day! The only thing I will do different next time is double the recipe! We served this chicken with a green salad and mashed potatoes! You MUST serve this chicken with mashed potatoes! Oh my gravy, the gravy!!!!
Honey Dijon Braised Chicken
Ingredients
2 Tbsp oil
salt and pepper
4 chicken breast (We used boneless, skinless)
1 large onion, sliced
2 Tbsp oil

4 cloves garlic, minced
1/4 cup water
1/2 tsp dried thyme
1/2 cup liquid honey
2 tbsp of dijon mustard
2 tbsp soy sauce
1 lemon, juiced
1/4 cup water

2 tbsp soy sauce
1 lemon, juiced
fresh parsley or green onions for garnish
Directions
Heat oil in a dutch oven over medium high heat. Sprinkle chicken breast with salt and pepper and add to the pan once oil is hot. Leave it alone and brown for 3 minutes on each side. Remove chicken from pan and add onions. Cook for 3 minutes. Reduce heat to medium and add garlic, stirring constantly for 1 minute. Add water to the onions and garlic and stir up any browned bits of flavor. Next add thyme, honey, dijon mustard, soy sauce, and lemon juice. Stir to combine and place chicken breasts back in the pot down in the sauce. Cover and simmer for 30 minutes. Every 10 minutes, stir and turn the chicken over and baste in the sauce. Garnish with fresh parsley or green onions and serve with mashed potatoes and lots of gravy!
