Roasted BBQ Chicken With Homemade Spice Rub
Let me start off by saying we LOVE chicken, and we eat a lot of it. Uncle Bee took one bite of THIS chicken and proclaimed it, ‘The BEST chicken he had ever had.’ I am MOSTLY certain it wasn’t because a shopping trip took a little longer than necessary and dinner was a tad late 😉
Seriously, though, make this! The spice rub makes enough for 2 or 3 chickens, and you can certainly half it if you want. If you store it in an airtight container, it will keep for months, or until you make it again, and TRUST ME, you will make it again…… and again….. We served this with my Dilled Ranch Potato Wedges and Corn. The leftovers would be great in Old Fashioned Chicken Salad or these bbq chicken enchiladas .
Roasted BBQ Chicken
Ingredients
1 whole chicken, about 3 to 3 1/2 lbs
2 TBSP mayonnaise
3 TBSP of homemade bbq rub (recipe below)
Directions
Rinse chicken inside and out well under cold water. Pat dry with a paper towel. With clean hands, rub the mayonnaise all over the chicken. Sprinkle homemade bbq rub over the chicken, inside and out. Place in a baking dish (I like to use my dutch oven for this) Bake uncovered on 350 degrees for 1 hour 30 minutes or until the internal temperature reaches 165. Remove from oven, cover and let rest for 30 minutes before carving.
The BBQ rub:
1 TBSP paprika
1 TBSP garlic powder
1 TBSP onion powder
1 TBSP chili powder
2 TBSP brown sugar
1 tsp salt
1 tsp cumin
1 tsp black pepper
1 tsp white pepper
1/2 tsp cayenne pepper
