Easy Crock Pot Potato Soup
Happy almost Friday! Boy do I have a delicious and EASY recipe to share with you guys! My Ultimate Loaded Potato Soup is one of my most popular soup recipes but it is not quick or easy. I wanted to see if I could find a slow cooker version with a lot less chopping and hands-on time….basically no babysitting 😉 Well #MissionAccomplished
This Easy Slow Cooker Potato Soup is seriously one of the easiest recipes EVER! And it passed the taste test hands down! We DEVOURED this soup along with some grilled cheese sandwiches and there wasn’t a drop left!

Ingredients
- 6 large baking potatoes, peeled, cut in 1/2 inch cubes
- 1 large onion, chopped
- 1 quart chicken broth
- 3 garlic cloves, minced
- 1/4 cup unsalted butter
- 2 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- sour cream
- bacon, cooked and crumbled
- more shredded cheese
Instructions
Add potatoes, onions, chicken broth, garlic, butter, salt and pepper to the slow cooker. (I always use a slow cooker liner for easy clean up!)
Cook on high for 4 hours or low for 8 hours. Mash potatoes as much as desired. Stir in the heavy cream and the 1 cup of shredded cheddar.
Serve topped with more cheese, bacon, a dollop of sour cream and green onions. ENJOY!
