We absolutely fell in love with Nana’s Easy Lemon Pound Cake! I could NOT believe how easy it was when she told me her recipe.
Things have been quiet on the blog the past couple of weeks because we have spent the last 2 weekends in Birmingham, to visit family. The first weekend we were there for my niece’s surprise sweet 16 birthday party! We had an absolute ball and my sister-in-law did such an awesome job with the party! We had a bonfire, hot dogs, chili & Smore’s! I got to meet so many of my niece’s sweet friends!
Before the party, we visited with my mother in law. She had pulled pork, baked beans, potato salad and lemon pound cake waiting on us for lunch! YUM! The pound cake was SO delicious! I immediately asked her for the recipe and was shocked at how easy it was! She was more than happy to share her recipe for the blog!

Ingredients
- 1 box lemon cake mix plus the amount of water and oil the box calls for
- 4 eggs (1 more than the recipe on the box calls for)
- 1 3.4 oz box lemon instant pudding & pie filling
- confectioner's sugar & milk (or lemon juice)
Instructions
Preheat oven to 350 degrees. (325 for dark or nonstick pan)
Combine cake mix, oil, water, eggs and instant pudding mix.
Pour into a well greased bundt pan.
Bake according to package directions. (38-43 minutes or until a toothpick comes out clean)
Let cake rest for exactly 10 minutes before removing from pan.
Once cake has completely cooled, mix confectioners sugar with a little bit of milk or lemon juice. Whichever your preference.
Drizzle over cake & enjoy!
