Double Decker Baked Tacos
As soon as I saw this recipe from my friend Michaela, over at An Affair From The Heart, I put it on our menu! We LOVE tacos and have them once a week. Either crunchy or soft, usually with refried beans on the side, but I never in a million years would have thought of combining the crunchy & soft tortillas and baking them with a layer of cheesy refried beans in between. Oh my goodness were these delicious. My hubby could not stop raving about these! We may never have regular tacos again!
Double Decker Baked Tacos (recipe source)
Ingredients
8 small four tortillas (soft taco size)
8 crunchy corn taco shells
1 pound ground beef
1 taco seasoning packet
1 small onion, chopped
shredded Cheese
1 (14 ounce) can refried beans
1 Tablespoon milk
1 Tablespoon salsa
Topping Ideas: lettuce, tomatoes, salsa, cheese, olives, sour cream, avocado
Directions
Preheat oven to 350 degrees. Brown ground beef with onion, drain grease and prepare with taco seasoning according to package directions.
In a small bowl, combine refried beans, milk & salsa. Stir in a big handful of cheese.
Divide meat evenly in each corn shell then top with shredded cheese.
Spread a heaping Tablespoon of bean mixture over a flour tortilla. Wrap it around a corn tortilla and place bottom side down in a baking dish. Continue with all of the shells. Use a baking dish that the tacos are able to stand up side by side, but not too crowded they can’t be stuffed.
Bake for 10 minutes, or until cheese is melted and tacos are hot. Remove from oven and sprinkle with toppings of your choice. ENJOY!
