Slow Cooker Chicken Fajitas

Happy weekend you guys! Can you believe Christmas is less than a week away? I made the mistake of putting Christmas shopping off til too late so now it looks like it will be a mad dash to the finish 😉 We have been using our slow cooker a LOT this week because it has been saving me so much time, and who DOESN’T need more time this busy holiday season? I saw a recipe for slow cooker chicken fajitas and had to give them a try, putting my own spin on them of course! 😉 You know how much we love Mexican food! This recipe could not be less authentic but who cares as long as it’s delicious right?
Slow Cooker Chicken Fajitas
Ingredients
2 bell peppers, sliced
1 large onion, sliced
2 lbs chicken breast, each breast sliced long ways into thirds
1 packet taco seasoning
4 cloves garlic minced
15 oz can diced tomatoes, drained
2 Tbsp brown sugar
1 Tbsp lime juice
1 Tbsp soy sauce
1 tsp liquid smoke
fresh cilantro
garlic salt to taste
Fajita fixin’s: tortillas, cheese, sour cream, salsa, guacamole, jalapenos, rice, beans, the possibilities are endless 😉
Directions
Place half the bell pepper and half the onion in the bottom of your slow cooker. Place chicken pieces on top. Season chicken on both sides with taco seasoning. Add minced garlic, then the other half of the bell peppers and onions. Dump diced tomatoes over the top and set the crock pot on high for 3 hours. After 3 hours, using a slotted spoon, remove chicken and vegetables to a plate and slice chicken. Discard juices from the crock pot and add meat and veggies back to it. Next add brown sugar, lime juice, soy sauce, liquid smoke and cilantro to the fajita mixture in the crock pot. Give it a little stir and cover and cook on high for 10 more minutes. Season with garlic salt to taste and serve in warm tortillas with all the fixin’s!
