Autumn Apple Greens with Honey Shallot Vinaigrette
I was contacted by the folks over at The Olive Table to see if I wanted to try out some of their Extra Virgin Olive Oil and Raw Greek Honey. Needless to say I jumped at the chance! I liked their products so much that I included them in my week of anniversary giveaways!

Y’all, before trying out their products, I had only had the olive oil and honey you buy at your local big box store. I had no idea how much better it would be. I was blown away by it and immediately decided to use the honey and olive oil for one of my favorite Fall salads. This salad and dressing is delicious with any old honey and olive oil, but if you get the chance to try some from The Olive Table, I would highly recommend it! (You can even order it online!) They have wonderful customer service as well!
Ingredients for the Honey Shallot Vinaigrette (adapted recipe source)
1 shallot, finely minced
1 tsp Dijon mustard
2 tsp red wine vinegar
1/4 cup extra-virgin olive oil
2 tsp honey
salt and black pepper to taste
Directions
Combine ingredients in a jar and shake to emulsify. Toss with salad ingredients below:

Ingredients
arugula/spinach Mixture (You could use all arugula or all spinach if you prefer)
candied pecans
dried cherries
Sliced Honey Crisp Apples
red onions, thinly sliced – I forgot to add these when I took the pic. whomp whomp. just pretend 😉
Sliced grilled chicken (you could leave this off if it was a side salad, but this was an entree salad for us, so I added the chicken!)
Directions
Combine ingredients in a large bowl, drizzle with above vinaigrette and toss. Serve immediately!
