Easy Buffalo Chicken Rice Bowl

Confession time. Since my youngest started school a couple of weeks ago, I have not been doing a good job planning my lunches. I haven’t been planning them at all, actually. In fact, one day I found myself eating a couple of pieces of leftover lunch meat and half a bag of chips. Needless to say, I was not feeling very good and had no energy in the afternoons.
This past week, when I was doing our menu plan and grocery list, I took the time to plan out my lunches. It literally took me less than 3 minutes to do, and has already made such a difference in how I feel.
Minute Rice sent me a little ‘back to school’ goody bag with some of their Minute® Ready to Serve Rice. I incorporated their SUPER easy to make rice into my lunches and was so impressed with how easy and delicious it was! The rice is microwaved for 1 minute without even adding any water. It cooked perfectly!
We had grilled a couple of extra chicken breasts for me to use for my lunches this week so this lunch took me less than 10 minutes to prep. Oh my goodness, was it ever tasty! Another day, I was on the go, so I wrapped it up in a tortilla. Seriously delicious!
Easy Buffalo Chicken Rice Bowls (or wraps!)
Ingredients
1 container Minute® Ready to Serve Rice
Leftover Chicken
Chopped Romaine
Cilantro
Celery, finely chopped
Cheese (I used cheddar and bleu cheese!)
Buffalo Sauce
Ranch Dressing
Green onions for garnish
1 tortilla (optional!)
Directions
Microwave rice according to package directions.
For the Rice Bowl: Layer in a bowl with chicken, lettuce, celery, romaine, and cheese. Drizzle with buffalo sauce and ranch dressing and garnish with green onions.
For the Wrap: Layer above ingredients in a tortilla and enjoy on the go!
