Spinach, Clementine & Feta Salad with Honey-Lime Dressing
We had this delicious salad for lunch this weekend, and loved it so much, I made it again and topped it with some marinated grilled chicken for dinner last night. This salad really tastes like summer to me. I am obsessed with clementines. Don’t be afraid of the fresh jalapeno in this recipe, just make sure when you are removing the seeds and ribs, that you wear gloves. (TRUST ME!)
Spinach, Clementine & Feta Salad with Honey-Lime Dressing (Adapted Recipe Source)
Ingredients
- 4 Cups Spinach
- 1/2 cup dried cranberries
- 4 clementines, peeled and sliced
- 4 radishes, very thinly sliced
- handful of chopped fresh cilantro
- 1/2 cup crumbled feta
- 1/2 cup sunflower seeds
- 1 medium jalapeno, seeds and ribs removed, very finely chopped
Honey-Lime Dressing
- 3 Tbsp fresh lime juice (about 2 small limes)
- 3 Tbsp olive oil
- 2 Tbsp honey
- 1 tsp Dijon Mustard
- 1/2 tsp chili powder
- salt to taste
Whisk dressing ingredients together in a small bowl and set aside. Place salad ingredients in a large bowl. Drizzle with dressing and toss gently. Serve.
