Peanut Butter Mug Cookie….For One
It’s no secret that we don’t eat a whole lot of dessert at our house. I would usually much prefer extra cheese or bacon in my meal than a sweet treat. But, every once in a while even I, a meat and cheese lover, get a craving for something sweet. The other night was one of those nights, and I didn’t want a whole pan of cookies or brownies lying around. I texted my friend Michaela from An Affair From The Heart with my dessert time dilemma. She sent me this recipe for a peanut butter cookie in a mug. It turned out so yummy and took less than 3 minutes from start to finish. PROBLEM SOLVED!
Directions
Add peanut butter and butter to your mug. Melt in the microwave for 30 seconds. Add sugars, salt and vanilla and stir to combine. Add egg yolk and stir again. Add flour and give one final stir. Sprinkle peanuts on top and heat in microwave for around 35 to 45 seconds. Microwaves can vary, so start checking it at 35 seconds. Serve warm and topped with ice cream if desired. Yum!
