Lemon-Parmesan Crusted Baked Chicken
My sister makes this recipe using Tilapia, and since I don’t eat seafood *hangs head in shame*, she makes me this version with chicken. It is SO easy and tastes like a gourmet entree. It is also really quick so it is a great weeknight recipe that really makes a special meal!
Lemon-Parmesan Crusted Baked Chicken (Adapted Recipe Source)
Ingredients
4 boneless, skinless chicken breast, pounded to an even thickness
4 Tbsp unsalted butter, softened
2 Tbsp lemon juice
1/2 cup grated Parmesan cheese
3 Tbsp mayonnaise
3 Tbsp finely chopped green onions or chives (I use whichever I have on hand)
1/2 tsp Tabasco sauce
1/4 tsp Lawry’s seasoning salt
1/4 tsp dried basil
1/4 tsp black pepper
Directions
Place chicken breast in a 13×9 pan that has been sprayed with cooking spray. Bake at 400 degrees for 20-25 minutes, or until cooked through. Meanwhile combine softened butter, lemon juice, parmesan cheese, mayonnaise, green onion, tabasco sauce, seasoning salt, basil, and black pepper. Once chicken is done, mixture over chicken breast. Return to oven and broil for 2-3 minutes or until topping is browned and bubbling. Serve.
