The Ultimate Island Pork Burgers with Mango Salsa
Ingredients
Mango Salsa Ingredients
One mango, peeled, chopped and diced
20 oz can of pineapple tidbits, (divided, The Juice and some of the pineapple reserved for the Teriyaki Sauce)
1/4 cup diced red onion
1/4 cup diced sweet pepper
Pinch of coarse salt
Teriyaki Sauce Ingredients
1/2 cup low sodium soy sauce
3 Tbsp brown sugar
3 cloves garlic finely minced
1 tsp ground ginger
2 Tbsp apple cider vinegar
1 tsp sesame oil
Burger Ingredients
2 TBSP Caribbean jerk seasoning
1 TBSP garlic powder
1 TBSP dried minced onion
1.5 lbs ground pork
Hawaiian King’s sandwich buns
Directions
For the Mango Salsa: In a medium bowl, combine mango with 3/4 cup of pineapple, (juice and remaining pineapple reserved for teriyaki sauce), onion, and sweet pepper. Add salt and mix well. Cover and place in fridge for the flavored to meld.
