I don’t know how many of you out there would want to slave over a hot stove for 30 minutes only to hear your significant other say, ‘This is great, Honey! This tastes just like Taco Bell!’ But for those of you out there who’s husband is a Taco Bell addict like mine, this recipe is for you! The secret to getting your taco meat, ‘taco bell fine’ is to add 1 cup of water to the pan when you fry the hamburger meat. If the idea of adding water to the hamburger meat grosses you out, you can skip that step and cook your beef like you normally do. The toppings can be customized as well. For example, as soon as the picture was taken, my eight year old scraped off every last bit of black olives and poured salsa all over hers 🙂
Taco Bell Enchiritos
Ingredients
1 lb ground beef
1 cup water plus additional 1 cup water to add to the taco seasoning
1 onion diced
1 TBSP jarred minced garlic (or to taste)
1 package taco seasoning
1 (16oz) can refried beans
1 (15oz) can mild red Enchilada sauce
8 Medium sized Tortillas
Sharp Cheddar Cheese
Toppings of your choice: black olives, green onions, tomatoes, salsa, jalapenos, and sour cream
Directions
Pour 1 cup of water in a pan. Add ground beef and onion. Cook until meat is no longer pink. Drain the grease. Add additional cup of water, taco seasoning, minced garlic, and refried beans to the meat. Stir to combine and cook for 5 minutes or until heated through. Remove from heat and prepare to assemble Enchiritos. Put a large spoon full of the meat/bean mixture into each tortilla. Roll like you would a burrito. Place in a Pam sprayed 13×9 pan. After all 8 are assembled and lined up in the pan, top with enchilada sauce then shredded cheese. Bake on 350 degrees for 20 minutes or until the cheese is melted. Sprinkle with toppings of your choice and serve!
