Crockpot BBQ Chicken Nachos
We have been busy moving all weekend! What better time to take advantage of the crock pot right? These bbq chicken nachos were perfect! We were able to keep the shredded bbq chicken in the crockpot on warm so everyone could make their own nachos whenever they got hungry. This chicken would also be great for pulled bbq sandwiches or on top of a salad! Side note: Where has canned nacho cheese sauce been all my life? We just discovered it this year and have found so many uses for it. After I finish typing up this recipe, I’m going to get back to unpacking boxes….hopefully the one with our toothbrushes 🙂
Crockpot BBQ Chicken
Ingredients
4-6 boneless, skinless chicken breast
1 onion, sliced or diced
1 1/2 cups of your favorite bbq sauce
1/2 cup ketchup
1/4 cup white vinegar
1 tsp red pepper flakes
1/4 cup brown sugar
1 tbsp minced garlic
Directions
Spray your crock pot with pam. Put chicken breast in bottom. Add the onions over the top of the chicken breast. In a small bowl, mix up the rest of the ingredients. Pour over the chicken and onions. Cover and cook on low 4-6 hours. Shred chicken with a fork.
For the Nachos we layer in this order:
Tortilla chips
Canned Nacho Cheese Sauce, warmed
Shredded BBQ chicken
Salsa
Extra BBQ Sauce (from the crockpot)
Sour cream
Jalapeno
Diced Red Onion
