Creamy Tomato Slow Cooker Chicken Pasta
I woke up to 2 sick kiddos yesterday. Bless them. On the way to the kitchen for one of my many trips for medicine, popsicles, ice water, and soup, I quickly scanned my refrigerator door for my menu plan to see what would be the easiest, most hands off thing to make for dinner. I have had quite a few questions recently about how I menu plan. I plan and purchase the ingredients for 1 week’s worth of dinners at a time. I do not decide which day we will be having what, because it really just depends on what is going on that day. Also, some days I wake up and decide ‘I DONT CARE WHAT WE HAVE BUT IT’S GOT TO INVOLVE GRILLED CHICKEN!’ (or bacon, it’s usually bacon….) So it gives me peace of mind by making sure that I have everything I need for dinners for the week, but it gives me the freedom for life’s hiccups or cravings 🙂
So, getting back to dinner last night. I decided on making Creamy Tomato Slow Cooker Pasta, a new to us crockpot recipe that I had received in an email from Betty Crocker a while back. It sounded SUPER easy and perfect for a day at home with sick kids. It did NOT disappoint! We will definitely be making this again! As usual, I made a few minor changes to fit our tastes 🙂
Creamy Tomato Slow Cooker Pasta
Ingredients
3 Boneless Skinless Chicken Breast
1 Onion, sliced thin
1 TBSP Minced Garlic
1 1/2 tsp dried Basil
1/2 tsp dried Oregano
1/2 tsp Salt
1/4 tsp Black Pepper
1 (15oz) jar Alfredo Sauce
1 (14.5oz) can Petite Diced Tomatoes (undrained)
1 (8oz) pouch Old El Paso Chili & Roasted Garlic Mexican cooking sauce
8 oz noodles
Shredded Mozzarella Cheese
Shredded Parmesan Cheese
Directions
Spray the bottom of the crock pot with Pam. Arrange Chicken on the bottom. Top with Sliced onions, garlic, basil, oregano, salt, and black pepper. In a separate bowl, pour the Alfredo sauce, tomatoes, and the Mexican cooking sauce. Stir to combine and pour over the chicken in the crock pot. Cover and cook on low for 6 hours. After chicken is cooked through, shred in the slow cooker and boil noodles according to package directions. Stir in cooked noodles to crock pot and top with lots of mozzarella & Parmesan Cheese. Cover and cook for 10 minutes longer or until cheese is melted. Enjoy!
