Cookies & Cream Ice Cream Cake
I am so excited to be participating in this year’s Freaky Friday Blog Hop: Summer Edition! This group is the brainchild of my friend,Michaela’s and it is SO MUCH FUN! For those of you that aren’t familiar with Freaky Friday, it is a group of food bloggers that get assigned a secret blog and we get to choose any recipe we want to make from it for our own blogs. Then all of the recipes are revealed at the exact same time and we get to see who had our page and which recipe they selected! It has been a great way for me and my readers to find new blogs to follow, and I feel honored to be a part of it!
I am MOST excited about this round because the blog I was assigned was (finally) An Affair From The Heart! Michaela is my bloggy besty and I seriously have a list of about 15 recipes I plan on making from her blog. She is one of the most wonderful, sincere and hard working people I have ever had the pleasure of meeting! Seriously, she is such an amazing cook, baker, wife, mom, fur mom and friend. There is never a time when she isn’t volunteering at her kid’s school or at their church. She also happens to be a really fun gift-giver and one of the funniest people I have ever known!
Most of the recipes I gravitate towards are savory types because you all know, I am not much of the baking type, and absolutely love her family friendly meals, So I figured I would make her Dill Pickle Dip or her Salisbury Steak Meatballs or her Chicken Piccata, or her Peg’s Salad or her Stuffed Pepper Casserole. Yum?!?!?!? Right?
But, I had a change of heart. I really REALLY wanted to make Michaela proud, and she is just the type person to make it easy for you to want to step out of your comfort zone. So I made one of her desserts that I have been wanting to try for years: One of her famous ICE CREAM CAKES! And I am SO GLAD I DID! It wasn’t even scary at all and it turned out BEAUTIFULLY! I was SO excited with how it looked (and tasted)!
This particular cake is one she calls Spencer’s Cake because it is the one her oldest son Spencer requests every year for his birthday, and now I know why! It is SINFULLY good. How could you go wrong with a brownie crust, layers of cookies and cream ice cream, crushed oreo cookies and hot fudge? Yeah. You can’t.
Cookies and Cream Ice Cream Cake (recipe source)
Ingredients
1 package of brownie mix, 8×8 size plus ingredients to bake as instructed on package
1 jar hot fudge sauce
1 package oreo cookies, half of them crumbled and the other half left whole
1 quart cookies and cream Ice Cream, slightly softened
Directions
In a spring form pan, bake brownies as instructed on the package. Allow brownies to cool slightly. Warm hot fudge in the microwave according to the jar. Spread a little more than half the hot fudge over the brownies. Sprinkle with the half package of cookies that you crumbled. Spread softened ice cream over the cookies then drizzle the rest of the hot fudge over the ice cream. Press the other half of the container of cookies, whole, around the edge of the cake into the softened ice cream, so they are sticking up. Quickly place the cake in the freezer to harden. (Best to make this a day ahead of serving it!) Enjoy!
