Old-Fashioned Meatloaf
This is the first meatloaf recipe I learned to make for my hubby years ago! Its one of my favorite Paula Deen recipes and one that we never grow tired of. I served it with Bacon & Tomato Southern Style Green & Baked Potatoes the other night, but we normally have it with fried potatoes. If you have enough leftover, be sure to make you a meatloaf sandwich for lunch the next day, with lots of mayo>>> My favorite lunch in the world!

Ingredients
- 1 lb ground beef
- 1 1/4 tsp salt
- 1/4 tsp black pepper
- 1 egg, lightly beaten
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 8 oz canned diced tomatoes with juice***
- 1/4 cup quick cooking oats
- 1/3 cup ketchup
- 2 Tbsp brown sugar
- 1 Tbsp prepared mustard
Instructions
Combine ground beef, salt, pepper, egg, onion, bell pepper, diced tomatoes with juice, and oats & shape into a loaf and placed into a Pam sprayed meatloaf pan. Combine topping ingredients and spread evenly over the top. Bake at 350 degrees for 1 hour or until meatloaf is done. Allow to rest for 10 minutes before slicing. Enjoy!
***I can never find an 8 oz. can of diced tomatoes, so I always just get the 15 oz. can, and use about half.
