September often means a change in schedules for many families. The good news is, I have several recipes that our family loves that I can have ready in that amount of time. One of my favorite tricks in preparing a meal that comes together in less than 15 minutes is using smoked sausage or leftover cooked meat as a meal starter. Another big help is Minute® Ready to Serve Rice! I always have it in my pantry.

Smoked Sausage with Peppers & Onions
Ingredients
1 Tbsp oil
1 Tbsp unsalted butter
1 lb smoked sausage
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 large onion, thinly sliced
2 cloves garlic, minced
1 {14.5 oz) can diced tomatoes, undrained
1 cube chicken bouillon
1 tsp Cajun seasoning
4 cups cooked white rice (We love Minute® Ready to Serve Rice)
Directions
Add butter and oil to a large skillet over medium high heat. Add sausage, peppers and onions and cook until starting to brown, stirring as little as possible to get some good color on it, about 10 minutes. Reduce heat to medium and add the garlic, stirring constantly for 1 minute. Add the tomatoes with juice, bouillon cube, and Cajun seasoning. Raise heat and bring to a slight boil, then reduce to low for a couple of minutes. Taste to adjust seasoning. Serve over rice and enjoy!
