French Onion Grilled Cheese
My favorite soup in the WORLD is a good, cheesy french onion soup. I decided to give it a whirl as a grilled cheese. With lots of caramelized onions and melty swiss cheese, and the secret ingredients? Beef Bouillon cubes to get that beef brothy taste without making your sandwich soggy.
French Onion Grilled Cheese Sandwich
Ingredients
1 Tbsp unsalted butter, plus more for buttering the bread
1 Tbsp olive oil
2 tsp brown sugar
2 beef bouillon cubes, finely chopped
3 medium onions, thinly sliced
8 slices sourdough bread
1 Tbsp fresh parsley, chopped
16 slices Swiss cheese
Directions
Add butter and oil to a medium skillet. Add onions and brown sugar. Cook over low-medium heat for 30 minutes, trying not to stir too much. The onions should be a dark brown color. When onions are almost finished, stir in chopped beef bouillon cubes. Stir until bouillon is dissolved and mixed into the onions well. Set aside.
Butter bread slices on 1 side and place butter side down on a large skillet or griddle. Add 2 slices of swiss, then onions, then 2 more slices of cheese then the top of the bread. Butter the outside piece of bread as well.
Cook over medium heat, until toasted, then carefully flip over and brown the other side. Cut in half and serve immediately along with your favorite soup!
