Apricot Chicken
My sister was telling me about this chicken she made a few weeks ago and how delicious it was, so I decided to give it a try myself. It was just as delicious as she said it was. It only has 4 ingredients also! This is going in our regular rotation. Make sure you serve it with some rice or mashed potatoes to soak up all that delicious sauce!
Apricot Chicken (adapted recipe source)
Ingredients
4 chicken leg quarters
1 cup Catelina salad dressing
1 cup apricot preserves
1 package lipton onion soup mix
Directions
Place chicken in a 13×9 baking dish. Combine dressing, preserves and onion soup mix. Pour over chicken and bake uncovered for 60-70 minutes or until done. Baste every 20 minutes or so during cooking. Carefully remove chicken to a plate and cover to keep warm. Pour pan juices into a glass and allow to cool and the fat to separate. Skim off the fat and serve chicken with remaining sauce over rice or mashed potatoes.
