Slow Cooker Cilantro-Lime Chicken
I have made this crock pot recipe a ton of times and we love it! This chicken is great for tacos, quesadillas, nachos or a taco salad. I love how easy it is! It is also a great freezer meal!
Cilantro Lime Chicken
Ingredients
3 chicken breast
1/2 red onion, minced
4 cloves garlic, minced
1 can black beans, drained and rinsed
16 oz frozen corn
1 cup cilantro, chopped
1 tsp cumin
juice of 2 limes
salt and pepper to taste
Directions
Place chicken in bottom of slow cooker. Add onion, garlic, black beans, corn, cilantro, cumin and lime juice. Place in slow cooker on low 6 to 8 hours. Shred chicken and season with salt & pepper to taste. Serve in tortillas, over nachos, in quesadillas or a salad. Top with cheese, sour cream, jalapenos and guacamole if desired!
*FREEZER MEAL DIRECTIONS*
Place all ingredients except salt and pepper in a gallon freezer bag. Label and date and add cooking instructions. Thaw in fridge for 24 hours before cooking. Place in slow cooker on low 6 to 8 hours. Shred chicken and season with salt & pepper to taste. Serve in tortillas, over nachos, in quesadillas or a salad. Top with cheese, sour cream, jalapenos and guacamole if desired!
