Good morning! Today I am sharing our favorite BBQ sandwich! This Chipotle Pulled Pork has a little bit of a kick to it, and the cool creamy coleslaw balances it out perfectly! The pulled pork is made in the crock pot and the slaw is made the night before or the morning of the evening you will serve it, so this makes a GREAT meal to serve company! Everything will be ready and your kitchen back tidy before your company gets there and you can spend time chatting with friends while everyone makes their own sandwiches, and you don’t have to be running around the kitchen!
Chipotle Pulled Pork
Ingredients
2 Tbsp olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1 (2 1/2-pound) boneless pork roast
1 onion, chopped
2 cloves garlic, chopped
1/4 cup apple cider vinegar
3/4 cup ketchup
2 tablespoons brown sugar
2 – 3 tablespoons TABASCO® brand Chipotle Pepper Sauce (depended on how spicy you want it)
1 teaspoon paprika
1 teaspoon Worcestershire sauce
Your favorite barbecue sauce for topping
Directions
Heat oil in a large skillet. Sprinkle roast with salt and pepper and brown in oil. Remove from skillet and place in slow cooker. Add onions to pan drippings. Cook onions for 5 minutes. Add garlic and stir constantly for 1 more minute. Deglaze the pan with cider vinegar. Scrape up any loose bits so they get incorporated in the sauce. Add the ketchup, brown sugar, chipotle tabasco sauce, paprika, and worcestershire sauce to the onion mixture. Stir to combine. Pour the onion mixture over the pork roast in the slow cooker. Cover and cook on low for 6 – 8 hours, or until meat is falling apart. Shred pork with 2 forks. Combine 1 cup of barbecue sauce with 1 cup of juice from the crock pot. Serve this thinned barbecue sauce over your pork when you make your sandwiches. Top with creamy coleslaw (recipe below)
Creamy Coleslaw
Ingredients
16 ounces coleslaw mix
3/4 cup mayonnaise
1/3 cup sour cream
1/4 cup sugar
3/4 teaspoon seasoned salt
1/2 teaspoon ground mustard
1/4 teaspoon celery salt
Directions
Pour coleslaw mix in a large bowl. Combine rest of the ingredients and pour over coleslaw. Stir to combine. Chill until ready to serve.
