This satisfying and velvety Smoked Sausage and Beer Cheese Potato Soup will absolutely warm you from head to toe!
This Smoked Sausage & Beer Cheese Potato Soup only has a small amount of beer in it, but it makes such a difference in the depth of flavor that I had to put beer in the name. The best thing about this soup other than the taste, is that it’s made in around 30 minutes. This is the perfect winter time, weeknight meal! Yum!
This is absolutely one of my husband’s FAVORITE soups! I always am wishing I had doubled it when I make it. This Smoked Sausage & Beer Cheese Soup is PURE southern comfort in a bowl! Bonus: It is ready in under 30 minutes so perfect for a quick weeknight meal on a cold night!
Here are a couple more of our favorite hearty and family pleasing soups:
6 russet potatoes, peeled and cut in 1” cubes (about 5 cups)
1½ lbs Velveeta, cut into ½” cubes
1 cup whole milk
1 cup heavy cream
½ cup beer
1/4 tsp black pepper
Chopped fresh parsley
Instructions
Dice sausage, onions and celery.
Melt butter in a large Pot (I use my dutch oven) and saute onions, celery and sausage for 5 minutes over medium high heat.
Add Chicken Broth and Potatoes.
Bring to a boil.
Reduce heat to medium then cook for 12 minutes.
Mash Potatoes slightly with a Potato Masher.
Add Milk, Cream, Beer, Velveeta and Black Pepper.
Continue cooking for about 10 minutes, stirring occasionally, until the Velveeta is completely melted and soup is heated through and potatoes are tender to your liking.

This is so yummy! Most of the time I don't have whole milk or heavy creme on hand so I use skim milk and a can of evaporated milk. Tastes almost as good and cuts calories/fat.
Wonderful soup for a chilly night. I didn't have heavy cream so I substituted 1 cup of milk and 1 tablespoon of butter.. My husband gave it two thumbs up! I saved this recipe to Pinterest.
Just made this today. It is delicious!!! I ended up whisking some flour into a little bit of the broth to thicken it up, because it didn't seem thick enough when it was finished. Maybe it was lack of whole milk? I used heavy cream and 2% milk. Either way, turned out great! Thank you for the recipe! Hopefully the husband likes it!
Made this tonight. I added an extra half pound of smoked sausage and a poblano pepper. I also substituted half a pound of jalapeño Velveeta for the regular. It was delicious. I already have a potato soup recipe that uses bacon, but wanted to try this one because we love sausage. Now I will have to take a vote from the family on which one to cook.
I have several picky eaters and when I made this recipe my family LOVED it, and said it was the best they have ever had!! Thank you for sharing, this will def be made again!!
