One of my favorite memories growing up in Birmingham, Alabama, was when I was 8 and my mom was pregnant with my little brother. Her favorite restaurant in the entire world was EL Chicos. It had closed down in our hometown, and my mom was craving it. For their anniversary, my dad loaded us all up and told her he had a surprise for her. We drove for several hours until we pulled up at an El Chicos, the next state over. That was the first of many trips he took her to El Chicos in Mississippi for dinner.
Food has always been a fun part of our family. My mom is an amazing cook. My parents never went on date nights without us kids. We always went out to dinner with them, and there was lots and lots of laughter. My mom is one of the funniest people alive. She also has the biggest heart of anyone I know. She has devoted her entire life to my dad, us kids and her grand kids and I am SO glad my kids get to call her Nanny!
My mom is NOTORIOUSLY hard to shop for. She has the means to buy anything she wants but doesn’t spend a lot of money on herself or collect anything. So a few years ago, when Grady’s, one of her favorite restaurants closed down (again!), I remembered my dads thoughtful gift from all those years ago and I found a copycat recipe of the dish she used to get from the closed restaurant, online in an old newspaper article! I surprised her and made it for her for Mother’s Day and gave her the recipe! She was thrilled! It was EXACTLY like the dish she loved, but better! Now she makes it all the time and that makes me SO happy! You KNOW I love to feed folks! I hope y’all enjoy this recipe! It is one of the most special ones I make, just like my mama!
1 can MILD rotel (diced tomatoes with green chilies), undrained
2 tsp salt
2 tsp black pepper
16 oz heavy cream
1/2 cup Parmesan cheese (The kind in the green can)
16 oz linguine noodles, cooked al dente
green onions
Instructions
In a large skillet, melt butter over medium-high heat.
Add the mushrooms and onions and saute until softened, about 10 minutes.
Add the minced garlic and continue cooking for 1 minute stirring constantly.
Add the UNDRAINED tomatoes, UNDRAINED rotel, salt and pepper. Continue cooking for 5 minutes.
Reduce heat to medium, add the cream and Parmesan cheese, and continue cooking until sauce thickens slightly, about 10 more minutes, stirring occasionally.
Meanwhile prepare linguine noodles according to package directions.
Toss cooked noodles with prepared sauce.
Top with sliced grilled chicken and lots of green onions.
