Slow Cooker Italian Zucchini & Tomatoes
Hello! We use our slow cooker SO much during the warm months, but it is usually for our entree as we prefer our veggies roasted, grilled, raw or pan fried in bacon grease 🙂 But, Michaela, from An Affair From The Heart, told me about a side dish she loves at her favorite restaurant that sounded SO delicious and easy! I decided to try to replicate it in the slow cooker! Pretty soon we will have zucchini and tomatoes coming out of our ears and this will be such a great way to use up those summer veggies!
Slow Cooker Italian Zucchini & Tomatoes
Ingredients
2 zucchini halved lengthwise then cut into half moons
2 tomatoes largely diced
1 onion, sliced
3 cloves garlic, minced
1 Tbsp Butter
1 Tbsp Olive oil
1/4 tsp salt
1/2 tsp black pepper
1/2 tsp italian seasoning
1/4 cup Parmesan Cheese
Fresh basil
Directions
Spray slow cooker with cooking spray, Add sliced zucchini, diced tomatoes, onions and garlic to slow cooker. Top with butter, olive oil, salt, black pepper and Italian seasoning. Cook on low for 3 – 4 hours. Toss with Parmesan cheese and top with fresh basil.
