Instant Pot Baked Potatoes
We absolutely LOVE having loaded baked potatoes for dinner at least once a week. And sometimes for a hearty lunch on the weekends. We pile them high with all the normal fixin’s: butter, sour cream, cheese, bacon, etc…
And then some yummy protein: BBQ pork or chicken, leftover taco meat, or other leftover meat from the night before. Such a great, easy dinner and a wonderful way to re-purpose leftovers!
Of course I am all about my instant pot and coming up with new, faster, easier ways to make some of our favorites, so I had to see if I could make our baked potatoes in there! I googled and found this recipe for instant pot baked potatoes and gave it a whirl and was really excited with how simple it was! And fast! So fast!

Ingredients
- Potatoes - however much you want (max of 5 pounds). Cut in half if desired. They need to all be roughly the same size.
Instructions
Insert the steamer rack into the instant pot
Add about 1 cup of water into the instant pot
Add your potatoes
Close lid and turn the vent to "sealed"
Press the manual button and set it for 10 minutes.
Once cooking completes let the pressure release naturally for 20 minutes.
IF you want a crispy skin. at this point you can brush the potatoes with oil (and salt if desired) and bake for 10 minutes in the oven at 350 degrees. Totally optional though.
Serve potatoes topped with ALL the fixin's and ENJOY!
