Beef Tips & Rice
Good Morning!!! You guys it has been so cold and rainy lately. Here in Alabama, we have the smallest amount of tolerance for cold weather. I was over it after about 1/2 a day. One of the fun parts of the freezing temps is warming up from the inside out with a comforting meal! I am super excited to share one of my childhood favorites with you guys! But first, a little back story 😉
My daughter is doing a 6 week volleyball developmental camp that meets twice a week. It has been wonderful for her with preparing her for middle school tryouts that are coming up in a couple of months. (volleyball is super competitive here!) It has also been fun because I have gotten to be good friends with a fellow volleyball mom there! (Hi Laura!)
We love to chat about our daughters and sons that are the same age, our pets, and of course, FOOD! A couple of weeks ago she had mentioned that Beef Tips & Rice was one of her favorite foods and I started thinking about how I hadn’t made that in quite awhile. One thing led to another and by the time practice was over, I had already mentally put it on my menu for the next week.
Lo & behold, the next day I woke up to an email invitation from Minute® Rice for me to partner and share a GO TO comfort food recipe with you all. I couldn’t think of anything more comforting than a big ol’ helping of Beef Tips & Rice!!! It was fate y’all!
Ingredients
- 3 lbs sirloin tips, trimmed of any gristle
- 1/3 cup all purpose flour
- 5 tablespoons oil, divided
- 1 large yellow onion, chopped
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 4 cups water
- 1/4 cup soy sauce
- 1/4 cup Worcestershire sauce
- 1 teaspoon seasoning salt
- 1/2 teaspoon black pepper
- 1/3 cup water
- 3 Tbsp all-purpose flour
- hot cooked Minute Rice
- Chopped fresh parsley
Instructions
In a large Dutch oven, heat 2 tablespoons oil over medium heat. Add onion, bell pepper and cook for about 5 minutes. Add minced garlic and cook for another minute, stirring to keep from burning.
Remove veggies from pan and place on a plate & set aside.
In a bowl, toss together beef tips and 1/3 cup flour. Add remaining 3 tablespoons of oil to the Dutch oven. Place half of the beef tips in Dutch oven and brown on all sides and cook for about 10 minutes, Remove beef to a plate and repeat browning the second half. Next, add the reserved veggies and the 1st of beef tips back to the dutch oven.
Add 4 cups water, soy sauce, Worcestershire sauce, seasoned salt and pepper, stirring well.
Bring to a boil.
Reduce heat to low and cover partially.
Let simmer for 1 hour.
In a small bowl, combine 1/3 cup cold water and 3 tablespoons flour, mix well.
Add flour mixture to the beef tips, cooking for 2-3 minutes or until mixture thickens. Taste to adjust seasonings. We added a little bit more seasoned salt and garlic salt, to taste.
Serve over hot cooked rice.
Garnish with parsley. Enjoy!
