Berry-Barbecued Pork Roast
Good morning! I hope everyone had a lovely 4th of July holiday! We made this delicious new to us bbq pork roast recipe and it was a huge hit! We served it with my Mama’s Baked Beans and Potato Salad (recipes to come!) and my Sweet Jalapeno Cheddar Cornbread. YUM! This recipe could not be any easier and only has 4 simple ingredients!
Berry-Barbecued Pork Roast (Adapted recipe source)
Ingredients
1 (3 lb) pork loin roast
1 can jellied cranberry sauce
1/2 of your favorite barbecue sauce
1/2 cup orange juice
salt & pepper to taste
Directions
Preheat oven to 350 degrees. Sprinkle roast generously with salt and pepper all over. Place fat side up in shallow roasting pan. Bake uncovered for 1 hour. Meanwhile combine cranberry sauce, BBQ sauce, and orange juice in a sauce pan over medium heat. Whisk together until warmed through. After the roast has cooked for 1 hour, brush some of the sauce on the roast. Bake 15-20 minutes longer or until a thermometer reads 145 degrees, brushing often with sauce. Let stand for 10 minutes before slicing. Slice and serve with remaining sauce.
