Impossibly Easy Chicken Club Pie
How are you guys? We have had a busy month over here! We are getting ready to move in a couple of weeks and this week, I finally bit the bullet and became a Pampered Chef Consultant. I have always been obsessed with their products so it’s a perfect fit for me!
I am really looking forward to our new kitchen. Lots of windows for natural light for taking food pics. Priorities right? 😉
We had this Impossibly Easy Chicken Club Pie for dinner last night and YOU GUESSED IT! It was IMPOSSIBLY easy! I loved that we could top it with lots of lettuce and tomato so it’s basically a health food right? 😉
Impossibly Easy Chicken Club Pie
Ingredients
1 1/2 cups diced cooked chicken (I used leftover grilled chicken. yum)
1/4 cups diced cooked ham
4 slices bacon, cooked and crumbled
1 cup shredded cheese (I used a combo of cheddar and swiss)
1/2 cup Bisquick Mix
1 cup whole milk
3 eggs, beaten
1/4 cup honey mustard dressing, plus more for serving
shredded lettuce
diced tomato
Directions
Heat oven to 400 degrees F. Spray a 9 inch pie pan with cooking spray. Layer chicken, ham, bacon, and cheese in the bottom of pan. In a medium bowl whisk together bisquick, milk, eggs and 1/4 cup honey mustard dressing. Pour over ingredients in pie plate. Bake 25 to 30 minutes, or until knife inserted in center comes out clean. Let stand 5 minutes then top each slice with lettuce, tomato and drizzle with additional honey mustard dressing. Enjoy!
