Crispy Chicken Salad with Creamy Honey-Lime Dressing
We don’t eat out a whole lot, but one of my favorite restaurant salads is the Crispy Chicken Salad with Honey-Lime Dressing from Cheddar’s. I don’t know why I had never thought to make it at home. I found this copycat version online and had to try it out. Oh my goodness it is spot on! I had this salad for lunch 3 days in a row! You could definitely make your own crispy chicken bites or chop up some chicken fingers, but I just used the Tyson frozen popcorn chicken anytizers.
Now I just need to find a copycat recipe for their onion rings!!!! YUM!!!!!!!!!!!
Creamy Honey-Lime Dressing (recipe source)
Ingredients
1 whole egg, beaten
¼ cup lime juice
1 tsp lime zest
½ cup honey
⅛ tsp salt
⅛ tsp ground nutmeg
1 cup sour cream
Directions
Combine egg, lime juice, lemon zest, and honey in a saucepan; whisk constantly over medium heat until thickened. Add salt and nutmeg; cool. Fold in sour cream and chill.
Fried Chicken Salad with Creamy Honey-Lime Dressing
Ingredients
1 head ice burg lettuce, chopped
tomato, chopped
corn
black beans, drained and rinsed
shredded cheddar cheese
fried chicken, cut into bite size pieces
Creamy Honey Lime Dressing (recipe above)
Directions
Combine lettuce, tomato, corn, black beans, fried chicken pieces, and cheese. Toss with Creamy Honey-Lime Dressing and serve immediately.
