BBQ Chicken Cornbread Bake
We had some leftover BBQ Chicken the other night and I was feeling inspired! I put together this INCREDIBLY easy casserole for lunch the next day and all 4 of us declared it one of the best meals we have had in a while! BONUS: It was ready in under 30 minutes(!) The red bell pepper REALLY made it something special, so don’t skimp on them unless you really hate bell pepper. We will be making this at least a couple times a month. Hint: If you have leftover chicken of any kind, just shred it up and add some of your favorite bbq sauce to make this recipe! Your leftovers will NEVER look better! <3
BBQ Chicken Cornbread Bake
Ingredients
1 box Jiffy Cornbread plus ingredients needed to prepare it
2 Tbsp butter
1 red bell pepper, sliced
1 small onion, chopped
2 cups leftover bbq chicken, chopped or shredded or leftover chicken mixed with bbq sauce
1/2 cup corn
Shredded Cheese of your choice
green onions to garnish if desired
Directions
Prepare and bake cornbread in casserole dish according to jiffy package directions. While cornbread is baking, saute bell pepper and onion over medium high heat for about 5 minutes, or until cooked to your preference. Reduce heat to low and add bbq chicken and corn. Stirring until heated through. My chicken was plenty saucy but if you want to add more bbq sauce, now is the time! Pour chicken mixture over baked cornbread. Top with cheese and broil for a couple of minutes until cheese is melted and bubbling. Top with green onions if desired. Serve!
