Pork Chop & Garden Vegetable Rice Bake
Good morning friends! I am SO excited about this recipe! This may be my favorite recipe I made all Summer! The rice is absolutely the best rice I have ever had and the pork was SO TENDER and juicy! Other than being absolutely delicious, it is also SO easy and all homemade! The thing I like about this recipe, is, other than 15 minutes of hands on prep, you cover and bake it for an hour. You can be helping the kids with homework, cleaning up the kitchen, or watching tv. You don’t have to remember to stir anything and your whole meal is in the oven together in one pan, when that timer goes off, dinner is done! Your protein, starch and vegetables all ready at the same time, baking together in 1 pan!

Ingredients
8 (1 inch thick) Pork Chops
salt & pepper to taste
1 tsp paprika
2 Tbsp oil
2 Tbsp butter
1 carrot, diced
1 bell pepper, chopped
1 cup fresh mushrooms, sliced
4 cloves garlic, chopped
1/2 cup green onions, chopped
14.5 oz can Italian style diced tomatoes, drained
1 3/4 cup chicken broth
1 cup long grain rice (must be this type of rice)
Directions
Melt butter and oil in a dutch oven over high heat. Once hot, add pork chops to the pan, I did 4 at a time. Brown for 3 minutes then flip to the other side and brown for 3 more minutes. Continue until all chops are done. Set aside in a plate. Add carrots, bell pepper and mushrooms to pot. Reduce heat to medium high and cook, stirring occasionally for 3 minutes. Reduce heat to medium and add garlic and green onions, stirring constantly for 1 minute. Add chicken broth, rice and diced tomatoes. Bring to a boil then reduce heat to simmer, stirring occasionally for 5 minutes. Pour the rice and vegetable mixture into a greased 13×9 pyrex dish. (It will seem like a lot of liquid and too little rice but it will change!) Top garden vegetable rice mixture with pork chops and cover the whole dish with aluminum foil. Bake at 350 degrees for 1 hour. (Your house is going to smell AMAZING!)
