Cheesy BBQ Rice Medley
This was the yummy side dish we served with our Skillet BBQ Pork Chops for Memorial Day! It was so delicious! Full of beans, corn, veggies and cheese, this rice could be a meal on its own!
Cheesy BBQ Rice Medley
Ingredients
2 Tbsp bacon drippings or butter
1 bell Pepper, diced
1 onion, diced
3 cloves garlic, minced
1 and 1/4 cup water
1 cup minute rice
1 chicken bouillon cube
15 oz can of corn, drained
15 oz can of black beans, drained
1/2 cup of your favorite barbecue sauce
1 Tbsp liquid smoke
shredded cheese
green onions
OPTIONAL: a few finely minced jalapenos would be SO good in this!
Directions
In a large oven proof skillet with a lid, Saute the onions and bell pepper in the bacon grease until tender. Add the garlic and stir constantly for 1 minute. Add the water chicken bouillon cube and bring to a boil. Stir in rice and cover and remove from heat. Let stand 5 minutes. Put back over low heat and stir in corn, black beans, barbecue sauce and liquid smoke until heated through. Top with cheese and green onions and place under broiler until cheese is melted.
