Beef ‘n Cheddar Salad with Creamy Roasted Garlic & Lemon Dressing
I am all the time sharing our dinner recipes so today I thought I would share one of my favorite lunches! My lunches tend to be on the lighter side because, well, Uncle Bee likes to eat a heavier dinner and I have to save room ๐ For my ‘Beef n Cheddar’ salad, I use romaine lettuce, GOOD deli roast beef, sharp cheddar cheese, tomatoes, carrots, cucumbers, bell peppers, purple onion and creamy roasted garlic dressing. Oh man, this dressing(!)
This is my absolute favorite Creamy style dressing. It tastes somewhere between ranch and Caesar with some roasted garlic and lemon thrown in there. WARNING*** This dressing is not for the occasional garlic user. It is STOUT. Like I like it. <SideNote> This salad and dressing are also low carb! BONUS for those of us (not me) watching our carbs!
In fact, this dressing is SO good that having it on hand in the fridge is really all the motivation I need to snack on more veggies!
Creamy Roasted Garlic and Lemon Dressing
1/4 cup Roasted Garlic, mashed into a paste (I roast it using this method. It takes me about 2 whole bulbs to get 1/4 cup)
1/2 cup Mayonnaise
3 TBSP grated Parmesan Cheese
1 Lemon, the zest and the juice
1/4 cup Heavy Cream
1/4 cup Whole Milk
1 tsp Salt
1 tsp Black Pepper
Combine all ingredients and blend until smooth. You can use more or less milk or cream depending on how thick you like your dressing. Store, covered in the fridge. I hope my fellow garlic lovers try it and let me know what y’all think!
