Nanny’s Tomato Gravy
Good afternoon everyone! We had an AMAZING yet simple brunch yesterday and the star of the show was my mama’s tomato gravy! Well, that and my world famous hash-brown casserole 😉 I don’t talk a ton about personal stuff over here on the blog, but I just have to take a minute to say how proud of my husband I am! He works 2 jobs AND goes to school PLUS takes every little odd job on the side that comes along to provide for us and I am so thankful for him! Yes, I spoil him absolutely rotten (as he does me) and he deserves EVERY BIT OF IT! We will be married 10 years next month, and I can honestly say we love each other more every year! I realize how fortunate that makes our little family and I thank God for him every single day! So, after a rather trying week, I was so happy to surprise him with this brunch! He LOVES brunch!!! <End Gushing>
Along with the Hash-brown Casserole and my mama’s amazing tomato gravy, we had Country Ham, Canned Biscuits, Coffee and big ole glasses of iced cold milk! Told ya it was easy! This recipe uses canned tomatoes so you can use it all year long, but I so look forward to trying it with fresh tomatoes this summer!!!!
Nanny’s Tomato Gravy
Ingredients
Country Ham Steak, sliced into pieces
1/2 cup Bacon Grease (divided)
1/2 cup All Purpose Flour
2 Cups Whole Milk
1 (15 oz) can Diced Tomatoes or Petite Diced Tomatoes with juice plus an additional 1/4 can of water
Salt & Black Pepper to taste
Directions
Fry country ham slices in a couple of tablespoons of bacon grease. After ham is fried well on both sides, add enough additional bacon grease to the pan to equal 1/2 cup. Over medium heat, Whisk in 1/2 cup flour and stir until combined and roux is light brown. Add milk and continue to stir until thickened. Add diced tomatoes and juice and then fill can 1/4 way with water and add that as well. Stir over low heat and add salt and pepper to taste and add more water if needed until it gets to your desired thickness. Serve over your favorite biscuits!
Aunt Bee’s ‘Famous’ Hash-Brown Casserole
Ingredients
1 (30 oz) bag of Ore Ida’s frozen country style shredded hash-browns
1/2 cup butter, melted
1 can Campbells cream of chicken soup
8 oz colby cheese, shredded
1 onion, finely diced
1/2 tsp salt or Lawry’s seasoning salt
1/4 tsp black pepper
Directions
Preheat oven to 350 degrees. Combine melted butter, chicken soup, salt, pepper, onion, and cheese in a large bowl. Mix in frozen hashbrowns by hand. Pour into a GREASED 9×13 glass pan and bake at 350 for 1 hour* After 1 hour, I like to turn the broiler on for a couple of minutes to let the top brown a little. This is completely optional and you have to watch them VERY closely!
