Today I have such a treat for y’all! My absolute FAVORITE recipes are passed down family recipes. One of our nearest and dearest childhood friend’s Grandmother makes this incredibly DELICIOUS casserole and she was so sweet to pass the recipe on to me to share with you guys! Crunchy Onion & Chicken Noodle Casserole is our family’s favorite comfort food casserole and I can’t wait for you to make it for your family!
We actually started making a double batch of this recipe most of the time now and make it in a 9×13 pan. Of course the leftovers are even better!
Y’all, this casserole is SOOOOO good! We are huge fans of french fried onions and they absolutely MAKE this dish! Feel free to sub out any veggies your family likes. This is also an EXCELLENT way to use up leftover Chicken. My sweet kiddos and I had so much fun making this casserole! A huge thank you to Grandma Betty for sharing her fabulous recipe with us! We will definitely be making it again and again!

1 Cup Vegetables of your choice (I used 1/2 cup diced Carrots sauteed in 1 TBSP butter and 1/2 cup frozen peas)
1 1/2 Cups shredded cheddar cheese, divided

Cook noodles according to package directions.
Combine cooked, cubed Chicken breast, cream of chicken Soup, milk, 1 cup french fried onions, sauteed veggies, cooked noodles and 1/2 cup cheese and pour into a greased 2 Quart Casserole dish. Hey there, In the first part of the ingredients you said you used this method to cook your chicken, cause you didn't have any leftover. What method was it? or did you dice it up and put it in the casserole raw? Thanks so much. Also, how many will this serve? :)
Hi there Joanne, in the sentence where I said 'this' chicken if you click on 'this' it will take you to the chicken recipe I used. But, you can use any cooked chicken, shredded or diced. No you would not add raw chicken to this casserole, only completely cooked chicken. I figure it would serve 6 if you added a veggie and a dinner roll with it. Have a great day!
