Sun-dried Tomato Pesto Pizza Sauce
So, there is a fast food type sandwich/pizza place we have around here called Schlotzsky’s Deli. They have the most insanely amazing pizza sauce. After doing a little research, I discovered there pizza sauce is a sun-dried tomato pesto marinara. Since yesterday was my BIRTHDAY and my whole entire life revolves around cooking, I decide to try my hand at making this type of sauce. It turned out SO good!! We just used publix fresh pizza dough and made a ‘grown up’ pizza with pepperoni, italian sausage, pepperoni, red onions, part skim shredded mozzarella for the base then topped it with some pieces of fresh whole milk mozzarella. Then the kids pizza was just pepperoni and shredded mozzarella. Both turned out amazing and even my pickly little guy loved it!
Sun-dried Tomato Pesto Marinara
Ingredients
1/3 cup Olive oil
2 small Vidalia Onions, diced
8 oz fresh mushrooms, chopped
2 TBSP minced garlic
4 tsp Parsley
1/2 cup White Wine
2 (14.5oz) can roasted diced tomatoes, drained
6 oz tomato paste
1 tsp dried oregano
1/4 tsp salt
1/2 tsp black pepper
1/2 cup prepared sun dried tomato pesto
Directions
Saute the mushrooms and onions in 1/3 cup of olive oil over medium heat for 5 minutes. Add in the garlic and parsley and saute for 1 more minute, stirring constantly. Add the white wine, diced tomatoes, tomato paste, oregano, salt, and black pepper. Reduce heat and simmer for 30 minutes, stirring occasionally. Remove from heat and stir in the Sun-dried tomato pesto. Cover and let sit for 1 hour to allow sauce to cool and let the flavors meld together. Put sauce in a blender or use an immersion blender to puree into a thick, smooth sauce. This freezes great and is awesome to keep in the freezer for when you are craving homemade pizza!
