Southern Style Peas
We had these yummy Southern Style Peas with our Oven Fried Chicken & Gravy the other night! They are our whole family’s favorite green veggie! When we first got married, Uncle Bee told me he wouldn’t eat any vegetables except for corn and potatoes. I am reasonably certain those don’t even count as vegetables ๐ So, I did what any good, southern wife does and added bacon and a smile ๐ It worked. We love these peas as a side for Hamburger Steak, Beef Stroganoff, Pot Roast, and Oven Fried Buttermilk Chicken & Gravy. Our kids call these peas ‘Better than Candy’ Peas. I hope your family likes these as much as ours does!
Southern Style Peas
Ingredients
4 slices bacon, diced raw
1 onion, Sliced
2 cups chicken broth
1 (16oz) bag of frozen sweet peas
enough water to cover the peas
pinch of lawry’s seasoning salt
Directions
In a large pot saute diced bacon until very crispy. Remove bacon from pan, leave bacon grease. Add the sliced onion to the pan and saute for 5 minutes, over medium high heat. Remove onions and set aside with the bacon. To the pan, add the chicken broth, peas, a pinch of lawry’s and enough water to cover peas completely and bring to a boil. Reduce to simmer, stirring occasionally until the liquid is cooked almost completely out. You have to stay really close towards the end, stirring often to keep them from scorching. After the liquid is cooked down, taste for seasonings. I sometimes add another pinch or 2 of lawrys, but remember the bacon will be salty too! Serve with the cooked bacon and onion on top. Enjoy!
