Creamy Italian Pasta Salad
So, I figured it was about time I posted something low fat…..just kidding, this is NOT that kind of blog. ๐ This Creamy Italian Pasta Salad is SO GOOD! You could definitely add some tomatoes to it if you were so inclined, and your husband your kids wouldn’t refuse to eat anything a tomato has touched. ha.
Creamy Italian Pasta Salad
Ingredients
16 oz bow tie noodles
1/2 red onion, very finely diced
1 bell pepper, very finely diced
1 (4 oz) jar pimentos, drained
3.5 oz pepperoni, chopped
4 oz salami, chopped
1 lb Mozzarella or Provolone cubed
1 (2.25 oz) can sliced black olives, drained
1 (16 oz) bottle of your favorite Italian salad dressing
1/4 cup mayo
Directions
Boil the bow tie noodles with 1 tsp of salt for the shortest amount of time the box recommends. Drain and rinse under cold water to stop the cooking process. I lay some paper towels in the bottom of a large bowl at this point and dump the noodles in to sit and let the paper towel absorb any excess moisture. Nobody likes watery pasta salad. While the noodles are draining, chop all of the ingredients. Remove the paper towels from the bottom of the bowl. Combine the red onion, bell pepper, pimentos, black olives, pepperoni, salami, cheese, Italian dressing and mayonnaise with the cold pasta. Stir to combine. Chill overnight and serve the next day!
