Flavorful Chicken Fajitas
My mother in law RAVED about this recipe last week and I immediately put it on our weekly menu! Well, she was right! These were so easy and delicious! You thinly slice the chicken and marinade it for 4 hours. If you slice up the veggies when you do the chicken, then when it is time to cook, this meal comes together in less than 15 minutes. Flavorful Chicken Fajitas (adapted recipe source)
Ingredients
1/4 cup oil, divided
2 Tbsp lemon juice
1.5 tsp Lawry’s seasoning salt
1.5 tsp dried oregano
1.5 tsp ground cumin
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp crushed red pepper
3 Chicken Breast, cut into thin strips
2 Tbsp butter
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 large onion, thinly sliced
4 green onions, thinly sliced
Flour Tortillas, shredded cheese, salsa, sour cream, fresh cilantro, etc….
Directions
Combine 2 Tbsp of oil, lemon juice, and the seasonings in a resealable plastic bag. Add the chicken and turn to coat. Refrigerate for 4 hours.
In a large skillet saute the peppers and onions in the other 2 Tbsp of oil and the 2 Tbsp butter, over medium-high heat until you reach your desired doneness. I like to leave them alone in the pan for a couple of minutes without stirring them to get a little bit of char on them. Remove peppers and onions to a plate. Add the chicken to the same skillet you cooked the veggies in and cook over medium high heat until done. Add peppers mixture back to pan and heat through.
Spoon filling down the center of tortillas and serve with fajita toppings of your choice! Enjoy!
