The last time I was over here on Aunt Bee’s Recipes was back in 2014 when I came over to share my Skinny Funfetti Dip.
Today, I’m bringing over one of my all-time favorite comfort foods…meatloaf. As a kid, I detested this dish. In fact, I hated it so much that my mom would make me a separate hamburger to enjoy while everyone else gobbled up her meatloaf. I don’t know if my taste buds matured or if this recipe is REALLY just that good, but I tried this recipe about 6 years ago and have never looked back.
I got this recipe from a high school friend and the hubs (Eric) and I liked it so much, it became our go-to dish to make for company. In fact, our friends have even titled it, “Eric’s Meatloaf.” The sauce is delicious and the melted cheese inside combined with the pepper and onion make for a dynamite combination. I hope you and your family will enjoy it soon!

I do not like meatloaf at all but my husband loves it. I have tried many recipes over the years and as much as he has enjoyed them I have not. This one has sold me! We both loved it so now it will be one of our favorite meals. Delicious and juicy! Thank you.
I don't do onions and peppers in meatloaf so other than that, I followed the recipe except I added muenster and provolone cheese on bottom half and topped it with the rest of the meat, sealing edges. Oh my stars, this was sooooo good. Bursting with flavor. I'll always use this recipe with the only difference being what I stuff it with. ;) thank you for sharing this.
I just made this recipe, it was very good. Next time I will saute the onions and green peppers that way the veggies are not as cruchy after baking the meatloaf. Otherwise, I followed the recipe and it was very good. I will make it again.
I made your meatloaf for my family and they loved it. The only change I made was instead of just ground beef I used the pork, veal and ground beef mix... it was very moist and tasty. Thank you, great recipe.
1 pound of ground beef seems like a small amount to make a meatloaf. I want to double the amount but does that mean i need to double the other amounts as well to maintain the flavor and taste or just use the amounts for 1 pound of ground beef?
Good question! My meatloaf pans are only big enough to hold meatloaves made with 1 lb of beef, so when I want to double this recipe, I just double all of the ingredients and divide the mixture into 2 meatloaf pans.
I made this meatloaf just an hour ago, and OMG! For the 1st time of my life this is the 1st perfect taste, perfect juicy. My husband loves the taste so much. And I never liked to eat meatloaf as well but this recipe made me eat it. Thank you so much for sharing your recipe. I followed the instructions except I put I little bit more cheese in the middle of the meatloaf. I highly recommend this recipe.

I’ve made this multiple times and love it. Today I made it for Sunday lunch and I didn’t have any green peppers or onions on hand so I made it without. Still turned out great. This time, I layered slices of provolone cheese in the middle - will definitely be doing that again in the future. Yum! Thanks for the recipe!
I’ve made so many meat loaves in my 32 years of marriage. Never put in green pepper or shredded cheese. I used Monterey Jack. This had so much favor. Perfect recipe that I WILL make again and again!

Have you ever tried adding a grated raw sweet potato into the mix? It's wonderful, subtly changing the taste to something less dense and "meaty". It adds a natural sweetness. And a few dallops of cumin too. I hold the ketchup, because of Monsanto. And I also hold the sugar. And I use quinoa instead of beef, you know, global warming and all. Add some ricotta and coconut oil, pink Himalayan salt, egg substitute, and whole peeled pearl onions. So a few minor changes but basically the same recipe. Happy holidays!

This has got to be one of the best meatloaf recipes that I've came across in quite some time. At least a recipe that does not contain milk which I could never understand why you would add milk to a meatloaf. Will differently be making again and again. Thanks for a great recipe.
