Chicken Pasta Primavera
So I went a tiny bit meal planning crazy this week and we are trying out 7(!) new recipes in a row. Not how I normally do things, but I guess I missed cooking and testing new recipes over my holiday break? So last night I made new meal #1 which was this Chicken Pasta Primavera and KNOCKED IT OUT OF THE PARK! Holy yum! I sure hope the rest of the new recipes I picked out are this delicious! This one is definitely going into our family favorite meal rotation!
Chicken Pasta Primavera (adapted recipe source)
Ingredients
4 Tbsp butter, divided
1.5 lbs chicken breast, diced
16 oz California blend frozen veggies, thawed
3 to 4 cloves garlic, minced
1 cup heavy cream
1 cup Parmesan cheese
2.5 cups dried Rotini noodles
salt & pepper to taste
Directions
Boil noodles according to package directions, drain and set aside. Meanwhile, in a large skillet, melt 2 Tbsp butter over high heat. Add chicken and brown for 5 minutes. Add the other 2 Tbsp butter and the thawed veggies and cook for 5 minutes more.
Next, reduce heat to medium and stir in the garlic for 1 minute, careful not to burn it.
Add the cream and reduce heat to low and simmer covered for 10 minutes or until veggies are tender. Stir in cooked noodles and Parmesan cheese. Season with salt & pepper to taste and serve.
