Nacho Supreme Soup
Good morning! I have been working on adding some new quick fix recipes to our rotation. This soup is one of our new favorites. It was ready from start to finish in under 20 minutes. It has all of the flavors of your favorite nacho supreme and is ready faster than you can say 4th meal! (get it? Taco Bell reference….haha) My kiddos REALLY loved this soup because they could add their own toppings. This would be GREAT for casual entertaining! You could sit the soup out in a slow cooker on warm and guests could pile whatever toppings on they wanted! Here is the recipe:
Nacho Supreme Soup (adapted recipe source)
Ingredients
1 lb ground beef
1 onion
3 cloves garlic minced
1 packet taco seasoning
1 can rotel, undrained (original or mild)
2 cups milk or half and half
1 15 oz can refried beans
1 can Campbell’s Fiesta Nacho Cheese Soup
1/4 cup fresh cilantro, chopped
Nacho Toppings: Your choice of shredded cheese, tortilla chips, green onion, black olives, tomatoes, jalapeno, sour cream etc….
Directions
Brown ground beef and onion. Drain off excess fat. Add garlic and cook for 2 minutes, stirring constantly. Add taco seasoning, rotel with juice, milk, refried beans, and nacho cheese soup. Stir and bring to a slight boil. Reduce heat. Simmer for 5 minutes and serve with all the toppings!
*For the slow cooker, brown ground beef and drain then add remaining ingredients to the slow cooker and cook for 4 to 6 hours on low. I would use a slow cooker liner or spray with Pam for less mess. Enjoy!
